There is nothing more enjoyable than a summer evening sat outside with
friends enjoying a BBQ together and having a glass (or two) of wine. This
might seem a distant thought on a grey and cold January day in the UK but
nows the time to put some planning in place to make your BBQ and patio area
the envy of your friends.

The gas barbecues I am going to recommend may not be for everyone, and in
some instances the BBQs are permanent fixtures in your garden… but if you
have the space they are totally worth it. I have my eyes on a little
project for the spring so that everything is in place for the start of
summer. I am planning on laying a new patio, extending the existing patio
further into the garden (smaller lawn means less mowing!) and to build a
gazebo over the back half of the patio. The gazebo will provide some
shelter and a framework for the climbing plants I will train to cover the wooden gazebo.

I had planned to pave the area with York stone but to keep the budget down I
have chosen some limestone paving stones, they still look great though. The
patio is increasing in size so once I have ripped up the old stones I am
going to have to create a new level surface where the lawn once stood, but a
friend is heading over and between the two of us I think we can complete
these stage of the project in one weekend.
The gazebo should not be too difficult to erect, you can buy the frames
either online or from a local DIY store, the key is to ensure that the
post-holes are deep enough and when you place them that the frame is
straight… there’s nothing more tricky than trying to connect up wonky
frames.

But the highlight of the whole project comes in the shape of a 4 burner
Island gas BBQ! This BBQ will be placed at the side of the patio in my
dedicated cooking area… yes I am that excited! The BBQ will be mains
fitted and with a stainless steel body and water-proof cover it is going to
last me years, that’s years of cooking burgers, sausages and ribs, and years
of fabulous evenings with friends.

Baking cakes and buns can be a great way to spend some time with your children. The relatively simple recipes for making cakes, buns and cupcakes mean your children can be involved throughout the baking. Getting them to help you measure out the ingredients, mix them together and line the cake tins can teach them valuable skills such as following a guided recipe and learning about measurements as well as being fun.

Making icing is great fun and can be completed by your children safely, they’ll have a fantastic time decorating their cupcakes and buns, and if they behave they can lick the spoon! For extra fun when decorating cakes you can pick up sugar toppings for cakes at any local supermarket, your kids can even have a competition to see who can decorate the best cake!

Just remember that when cooking with children that any knives are only handled by adults and keep them away from the oven.

So get the recipe books out, get the right ingredients and get baking, you and your children will have a great day, and if the sun is shining head out for a picnic of cakes, cupcakes and juice in the local park.

Steak is one of the common elements of international cuisine, regardless of its specificity; the only variations are those related to cooking modes and seasonings. The uniqueness of the steak recipes is actually given by that one ingredient that makes a dish different from another one in almost all aspects, since taste change is actually the rule that governs gastronomy in general. Furthermore, dressings, sauces, salads and side dishes contribute to the differentiation of steak recipes; it is one thing to fry beef and serve it as such, and it is something else to add raw vegetables and let them sear together.

Then, we could easily say that beef is to the western world, what lamb is to the eastern one; but steak recipes for such kinds of meat have common points that cannot be ignored. For instance, adding wine when cooking meat is perhaps among the most frequent shortcuts taken to enhance flavor and speed up the tenderizing process of the muscular fiber. Steak recipes that rely on red wine usually require laurel leaves, green and black pepper beans as well as several cloves of fresh garlic. Take one of these ingredients out and the taste will not be the same.

Preparing steak recipes with white dressings is another common element of most cuisines: sour cream, milk and flour are basic ingredients while the spices and the preparation specificity differ. Such steak recipes are ideal for any meat lovers as they can be prepared rare or well done, grilled or broiled. What it truly matters for the success of all steak recipes is the quality of the meat used; hence, fresh meat is definitely preferable to the frozen or semi-processed one. Try cooking the steak recipes at the microwave as little as possible since the flavor is not the same as food prepared directly on the stove or over a coal fire.

As for the possibility of learning new steak recipes, the Internet is probably the most comprehensive source of information since it provides more complex data than any authentic cooking book. When accessing gastronomic pages online, you’ll also find some steak recipes specific to other cuisines than the one you are used to; this is a good way of preparing a surprise for the family or a romantic dinner for your partner. Always be careful with the ingredient dosage; generally speaking, all steak recipes indicate the number of people the dish is meant for. If you are fewer than that, try to adjust the spice quantities yourself as they are the most likely to influence flavor.

When I was too young and innocent to recognize obscenity, my family received a holiday popcorn tin from my father’s office. I ate my way down to the bottom: through the fake cheddar soot, the caramel casings, the buttered nutmeat. And though I remember being sick, it’s the stench that really lingers in memory—how the separate aromas oxidized and burned my sinuses.

With the 82nd Academy Awards approaching and the scent of popcorn in the air, I think it’s time to tell world that I can’t stand popcorn. I can’t even be in the same room as the stuff. This past August, the food editors at America Online polled thousands of their readers, and according to them, America’s most despised foods include liver, chitterlings, and parsnips. Other than popcorn, mine are meringue, squid, and catfish, but those are only dislikes; I wouldn’t starve in Key West. I’d much sooner see those three wrapped around a liver-chitterling Popsicle than share living space with a fresh batch of popped corn.

Not everyone’s first popcorn snack ends in sickness, of course. People say popcorn is delicious, low-calorie, and fun to chew—no, I’m joking. Anyone who would defend popcorn would also, I’m sure, sell his children for spare parts. I’m routinely surprised to see people eating popcorn—those slimy Styrofoam berries, those dehydrated sea sponges. And it’s never dainty picking, the consumption of popcorn. It’s gorging. It’s glutton-eering. It’s the cramming of greasy, tasteless florets in Natural Flavoring down the esophagus is what it is.

Among its crimes, let’s start at the top: Popcorn is cinema’s worst enemy. Worse than cell phones, worse than Andie MacDowell. I accept that popcorn is a big money-maker for theaters—profit can be upwards of 90 cents for every dollar of popcorn sold. But popcorn eaters sound like they’re engaging in jungle combat—all that squealing and crunching. When I was in college, Breaking the Waves made me vomit. Shaky camerawork and Danish sadism I can tolerate. It was the smell of buttered popcorn that did the trick. And say what you want about cigarettes causing cancer, at least smoking is silent.

Second, aesthetics. Popcorn looks like sheep shit. Bagging and buttering it only makes it look clammy. Maybe I’ve seen one too many Cremaster cycles, but I’m convinced that if Matthew Barney wasn’t so interested in petroleum jelly, he’d use popcorn instead.

Third, nutrition. According to the Popcorn Board, a trade group funded by U.S. popcorn processors, Americans consume about 16 billion quarts of popcorn annually. That’s 52 quarts per person, which isn’t so bad if we’re just talking about stove-top corn popping. But not listed is how many of those quarts have melted “butter” pumped on top. A lot, I’d guess—which is a scary thought. A November 2009 study by the Center for Science in the Public Interest found that a medium popcorn at a Regal-chain movie theater contains 1,200 calories and 60 grams of saturated fat (the fat of an entire stick of butter). Popcorn even inspired our obesity epidemic: In The Omnivore’s Dilemma, Michael Pollan says that the inventor of “supersizing,” David Wallerstein, experienced his Newton moment while observing people in movie theaters. He noticed that although customers were ashamed to hit the snack bar for second helpings, they didn’t mind paying more in the first place if their popcorn was served in a bucket.

Finally, the plight of the nation. This one’s simple. If all the corn that goes into making popcorn was diverted to the ethanol-fuel industry, we wouldn’t be so dependent on foreign oil.

I believe I’ve made my case. But I don’t imagine many people will agree with me. Americans love popcorn, and their love doesn’t quit. According to Andrew F. Smith’s Popped Culture, from 1936 to 1947, average popcorn production was 170 million pounds. By 1965, production was reaching 533 million pounds. In 1997, more than 997 million pounds. And it’s not only plain or buttered that’s adored; these days you can buy all kinds of doctored popcorn: heritage-kernel popcorn, white chocolate popcorn, blue-raspberry popcorn. I’m just a lone voice, crying in a field of exploding cobs.

For the sake of “real” journalism, while writing this article I’ve considered the idea that it’s wrong of me to find popcorn intolerable. Indeed, maybe irrational hatreds—I’ll admit my hostility is irrational—are inherently invalid. I was torn and decided to call an expert: an old friend (I’ll call him Harry) who writes well-regarded history books about war. He also happens to hate Belgium. Always has.

“Hate,” Harry said, “is a strong word for the Belgians, but I think it’s appropriate. For three reasons: Firstly, no one can name a famous Belgian.”

The pleasures, and stresses, of cooking with an iPhone.

My iPhone is absolutely filthy, and not because it’s clogged with frisky NSFW photos. The screen cover is coated with streaks of flour and butter and overlaid with a haze of anonymous kitchen grease. For the past couple of weeks, I’ve been trying to suss out whether the iPhone can earn a place in my kitchen. And just as any new pair of sneakers must one day be scuffed, I’ve had to let my shiny wireless pet get mussed.

The first smudge was unsalted butter. It was my daughter’s second birthday, and she wanted pink frosting on her pink cupcakes. In search of a good buttercream, the kind made extra fluffy with Italian meringue, I downloaded the Epicurious app, which houses the Condé Nast recipe library (Bon Appetit‘s, and—sniff—the late Gourmet’s). The Condé repertoire is huge: My search delivered 15 recipes for vanilla buttercream, and I chose one with a high (3.5- out of 4-fork) reader rating. The type was crisp and clear. A handy shopping list function presented a checklist of necessary ingredients.

Phone-assisted production of the frosting proved a little tricky, though. Preparing this kind of buttercream, you see, includes a few moments of tension: first, pulling the sugar syrup off the stove at the correct temperature, and second, whipping said syrup into egg whites without throwing the screaming-hot liquid back onto your skin—or any several-hundred-dollar device that might be lying next to the bowl. I had started churning the whites in my mixer when my mind went blank on the proper temperature for the syrup (238-242 degrees Fahrenheit, it turns out). I looked to the phone—its screen was black. I had to stretch across the counter, using one hand to keep the thermometer in the pot and the other to reawaken the phone and find the correct temp, which, in the interim I had overshot. Although the buttercream survived the extra degrees, I started feeling nostalgic for the printed page. A cookbook can lie open, but a smartphone needs constant tactile reassurance.

After trying Epicurious, I turned to Michael Ruhlman’s app, Ratio, based on his book, Ratio: The Simple Codes Behind the Craft of Everyday Cooking, in which he encourages home cooks to do more improvisation by understanding the basic proportions of key recipes: the fat/meat/salt balance of a fresh sausage, say. His Web tool provides these ratios for several preparations and then calculates the proper quantities of the ingredients for you: for X amount of flour, use Y amount of liquid, and Z ounces of eggs. I used it to make buckwheat crepes for a family dinner. Somehow the stripped-down nature of the mobile phone matches Ruhlman’s structuralist approach to cooking. Since this technique entails simply lining up the correct ingredients rather than mastering tricky methods, I was less troubled by the iPhone’s persistent blank-outs.

Less bare-bones is the Vook format, which I first learned about when David Lebovitz considered the future of the cookbook on his blog. Vooks are electronic books that can be downloaded to your iPhone (or to your PC), enriched with photos, video clips, and social functions. For $3.99, I downloaded what at the time was the only extant cooking Vook, The Breakaway Japanese Kitchen, by Eric Gower, which, along with its recipes, has little videos of Gower preparing his Cal-American riffs on Japanese ingredients like shiso, udon, and pickled ginger. But in the end, I used the Vook’s simple recipes, not its multimedia, to guide me in the kitchen. I’m with Michael Pollan in thinking that cooking videos often lead to lethargy rather than active inspiration.

Having tried a few cooking applications, it seems to me that the only undisputed advantage of cooking from a smartphone is the ability to fold shopping into the process of making a meal. I mentioned Epicurious’ handy shopping list. Grocery Zen is even better. The app downloads recipes from Amanda Hesser’s Food52 site—like, say the couscous, fennel, and almond salad I tried out—and breaks the ingredients into a shopping list. You can add non-recipe items like Bon Ami or Cheerios and cross off items as you fill your cart, or, if you like, send the list to your sweetheart to pick things up after work. This fluidity between procuring and preparing also allows you to respond to the market: If you see a nice stash of mackerel at the fish counter, you can find a recipe online and purchase the other ingredients on the way home, without a second trip. Shopping applications (there are others, too, like Grocery IQ) combined with recipe apps take full advantage of the iPhone’s mobility. Back home in the kitchen, though, mobility isn’t really what you’re seeking: You just want something easy to read and able to survive a splattering of Sriracha. (That’s why, when I do work from Web recipes, I generally print them out—backward as that may be.)

The digital writing may be scrolling across the wall, but I’m still drawn back to my printed library. The other night, I had some lovely sour cherries on hand and I thought I’d like to use them to make a clafouti, a favorite easy dessert of mine, basically fruit surrounded by a batter that cooks up somewhere between a cake and a custard. I flirted with a few recipes on the Epicurious site, but the user comments weren’t universally positive, and I already have the perfect clafouti recipe in mind: Jean-Georges Vongerichten’s from his first cookbook. His version is a pear clafouti with star anise, which I have made dozens of times with every conceivable fruit.

Cookbooks have continued to sell even as other sections of the print industry plummet, and for a while, at least, I think they’ll continue to buck the trend. I just can’t imagine that too many people want to interrupt their whisking to refresh their screens. And rich as the Web-recipe repertoire is (since, of course, you can use your iPhone for browsing, too), those tiny little screens still present just a snapshot view of a food writer’s craft. Cookbooks and cooking magazines sell not just recipes, but a whole logic of the kitchen. It’s the interstitial pictures, and headnotes, and sidebars, that communicate the author’s philosophy—whether she is more concerned with streamlining for ease or refining toward perfection, preserving tradition or debunking kitchen myths, cooking through the seasons or discovering exotic ingredients. Cookbooks are like albums, whereas iPhones, for now, only offer tracks. I know it’s just a matter of time before form and function converge for a truly compelling digital cooking album (no doubt the iPad will push that form along), and I’ll likely take my iPhone to the grocery store from here on out. But for now, at least, once I start preparing dinner, I’ll stick to print and let my phone recharge.
