<p>Here is a history of the cheese-steak and a few tips on where hungry workers can find the best Philly cheese-steak in Philadelphia.</p>

<p>This yummy submarine roll sandwich is a mixture of fried steak, onions and oozing cheese that leaves the hands greasy and mouth salivating for more.</p>
<p>First sold at a small hot dog stand in the city, the cheese-steak was invented by Pat and Harry Olivieri who used hoagie rolls as the bread base for what was to become the meat lover&#8217;s local food of choice. The sandwich was quick to be labelled as a much-loved snack by Philadelphians and Pat ended up opening a restaurant, selling the sturdy beef provision, on 9th Street called Pat&#8217;s King of Steaks.</p>
<p>Pat&#8217;s eatery is often cited as the best place to find a cheese-steak and the menu includes pleasant additions to the original recipe such as mushrooms, peppers and assorted cheeses. Famous faces who have graced the 80-year-old store with their celebrity presence include Humphrey Bogart and Barack and Michelle Obama. The Obamas  ordered the ‘Whiz wit&#8217; sandwich that&#8217;s topped with squeezy Cheez Whiz.</p>
<p>Directly across from Pat&#8217;s flagship store is Geno&#8217;s Steaks, which was founded by Joe Vento in 1966 and sells pizza steak sandwiches and provolone based options too. The slightly older but just as established Jim&#8217;s Steaks, opened in 1937, has four Philadelphia stores. One is located in the famous South Street area where all steaks are served with fried or raw Spanish onions, hot peppers and seasoning.</p>
<p>Dalessandros Steaks on Wendover Street in Roxborough is another specialist place creating sandwich meals for famished Philadelphians. Saturated with the sound of sizzling meat and replete with fresh bread rolls customers keep coming back to the store despite the aged decor and unsuitable parking. The menu must be worth it!</p>
<p>The Philly cheese-steak can be a filling meal, a quick snack or an ideal lunch for staff working in Philadelphia office space in need of a fast comfort food with attitude. Here&#8217;s hoping the Philadelphia cheese-steak will always remain a fixture on the city&#8217;s local menu.</p>

However, if you do not know what you are doing, it can be extremely difficult to produce a great steak. Lots of people say they have the best method, but choosing can be pretty tricky. Here is a quick overview of how long and how hot you should cook your steak.</p>
<p>&#13;Step one is remembering that you do not start with cooking. You start by selecting the best possible steak, and some people even purchase a whole tenderloin and butcher it themselves to make sure they&#8217;re getting great meat.</p>
<p>&#13;You will need to look for steaks that are three to five ounces each, whether you cut them yourself or buy them. Consistency is important, since consistent thickness and size mean your steaks will be a lot more reliable when you cook them.</p>
<p>&#13;The next step is learning to cook beef on the grill, if you do not already know how. Many people think that grilling takes no skill at all, but they would be wrong. If you do not know what you are doing, you will get meat that is safe to eat, but does not have a lot of taste. Remember that grilling is a fast, intense type of cooking, which makes your mistakes that much more difficult to work around.</p>
<p>&#13;Be sure your grill is very hot and your steak is seasoned correctly before you start cooking. Seasoning should be gentle enough to allow you to taste the meat, but strong enough to complement the flavor of the beef. Put the side you would like to show off on the plate down on the grill, and cook it until it is about three quarters of the way done. Then flip it and finish it to your preferences. Grilling beef does not have to be complex if you pay attention.</p>
<p>&#13;So, how long to cook a steak, and how hot should it be? Unfortunately, the answers start getting complicated pretty quickly. Usually, all we can say is that you should cook a steak till it is done. However, the process of cooking a steak is something that happens the same way every time, as long as you know what you are looking for. Keep an eye on the changes that happen in the meat to know when your steak is ready for eating.</p>
<p>&#13;At a hundred sixty-five degrees Fahrenheit, the proteins begin to coagulate, and the steak will shrink and stiffen, with sides that begin to tend toward gray or brown. At three hundred twenty degrees, the grill marks start to show and the sweet smell that says the steak is cooking right begins to appear.</p>
<p>&#13;The steak will then begin to bubble, as the juices come up from the bottom. At this point, the steak is half to three quarters done, and it is time to flip it.</p>

<p><strong>&#8211;Golden Corral&#8217;s Seafood Salad&#8211;</strong></p>
<p>1 lb. imitation crab meat, shredded</p>
<p>1 cup diced celery</p>
<p>1/2 cup mayonnaise</p>
<p>1/4 cup sliced green onions (with the green too)</p>
<p>1 tablespoon lemon juice</p>
<p>3 hard boiled eggs, chopped.</p>
<p>Mix all ingredients. Refrigerate for about an hour to allow flavors to blend. Serve either a salad, on lettuce, or on split croissants.</p>
<p> </p>
<p><strong>&#8211;Golden Corral&#8217;s Bourbon Street Chicken&#8211;</strong></p>
<p>1 Pound Chicken leg or thigh meat</p>
<p>Cut in bite size chunks</p>
<p>4 oz Soy sauce</p>
<p>1/2 cup Brown sugar</p>
<p>1/2 tsp. Garlic powder</p>
<p>1 tsp. Powdered ginger</p>
<p>2 tbs. Dried minced onion</p>
<p>1/2 cup Jim Beam Bourbon Whiskey</p>
<p>2 tbs. White wine</p>
<p>Mix all the marinade ingredients and pour over chicken pieces in a bowl.</p>
<p>Cover and refrigerate (stirring often) for several hours (best overnight).</p>
<p>Bake chicken at 350 for one hour in a single layer, basting every 10 minutes. Remove chicken. Scrape pan juices with all the brown bits into a frying pan.</p>
<p>Heat, and add 2 Tbs. white wine. Stir and add chicken. Cook for 1 minute and serve.</p>
<p> </p>
<p><strong>&#8211;Golden Corral&#8217;s Brass Bakery Yeast Rolls&#8211;</strong></p>
<p> 1 envelope Active dry yeast</p>
<p>1/4 cup Very warm water</p>
<p>1/3 cup Sugar</p>
<p>1/4 cup Butter or margarine</p>
<p>1 teaspoon Salt</p>
<p>1 cup Scalding hot milk</p>
<p>1 Egg &#8212; lightly beaten</p>
<p>4 1/2 cups Sifted all-purpose flour</p>
<p>2 tablespoons Melted butter or margarine &#8212; for brushing rolls.</p>
<p>Sprinkle the yeast over very warm water in a large bowl (Very warm water should feel comfortably warm when dropped on wrist.)</p>
<p>Stir until yeast dissolves.</p>
<p>Add sugar, the 1/4 cup butter or margarine and salt to hot milk and stir until the sugar dissolves and butter or margarine is melted. Cool mixture to 105 to 115 degrees.</p>
<p>Add milk mixture to yeast, then beat in egg. Beat in 4 cups of the flour, 1 cup at a time, to form a soft dough. Use some of the remaining 1/2 cup of the flour to dust a pastry cloth.</p>
<p>Knead the dough lightly for 5 minutes, working in the remaining flour (use it for flouring the pastry cloth and your hands). Place dough in a warm buttered bowl; turn greased side up.</p>
<p>Cover and let rise in a warm place until doubled in bulk, about 1 1/4 to 1 1/2 hours. Punch dough down and knead 4 to 5 minutes on a lightly floured pastry cloth.</p>
<p>Dough will be sticky, but use as little flour as possible for flouring your hands and the pastry cloth, otherwise the rolls will not be as feathery light as they should be.</p>
<p>Pinch off small chunks of dough and shape into round rolls about 1 1/2 to 1 3/4 inches in diameter. Place in neat rows, not quite touching, in a well-buttered 13 x 9 x 2 inch pan.</p>
<p>Cover rolls and let rise in a warm place until doubled in bulk, 30 to 40 minutes. Brush tops of rolls with melted butter or margarine, then bake in a 375 degree oven for 18 to 20 minutes or until nicely browned.</p>
<p>Serve warm with plenty of butter. This recipe yields about 2 dozen rolls.</p>

<p>2 lbs round steak (or flank or brisket)<br />1/4 C. soy sauce<br />1 Tbsp. Worcestershire<br />1/4 tsp. ea. pepper and garlic powder<br />1/2 tsp. onion powder<br />1 tsp. hickory smoke-flavored salt</p>
<p>Trim and remove fat from meat. Cut meat in 1/8 to 1/4 thick slices. In a bowl combine all but meat. Stir until seasonings dissolve. Add meat and mix thoroughly. Let stand one hour. Shake off excess liquid and put meat slices on oven racks or shallow baking pan. Dry meat at lowest possible oven temp (maybe 180 or 200) until it is brown, hard, and dry. Can take as long as 24 hours.</p>
<p>Beef Jerky #2</p>
<p>1 1/2 lb Flank steak</p>
<p>Select a 1/2 inch think flank or top round steak. trim away all fat then partially freeze until firm. Slice across the grain in a 1/4 to 1/2 inch wide strips. Place meat strips in a shallow dish or heavy plastic bag. Add soy or terriyaki sauce to cover meat. If desired onion or garlic powder or Worcestershire sauce can be added. Toss to coat each piece. Cover and refrigerate several hours or over night. Lift meat from marinade, drain will then air dry for a couple of hours. Arrange meat strips in single layer on fine wire screen or cake cooling rack. Place in low temp. oven (175 to 200<br />degrees) or slowly smoke-cook in smoker until meat is completely dried. Store in air-tight container. Serve as a snack or appetizer.</p>
<p>Beef Jerky #3</p>
<p>1/2 ts Pepper (MORE FOR HOT)<br />1/2 ts Garlic Powder<br />1/2 ts Onion Salt<br />1 lb Beef Roast<br />1/2 c Soy sauce<br />1/2 ts Garlic Salt<br />1/2 ts Lemon Pepper</p>
<p>Marinate 1 hour or overnight. Bake in oven 150 to 170, overnight for 10 &#8211; 12 hours.<br />Beef Jerky #4</p>
<p>1 Flank Steak Or London Broil<br />Coarse Black Pepper<br />1/2 c Soy Sauce<br />Garlic Powder</p>
<p>Cut flank steak or london broil into 1/4&#8243; strips. Sprinkle with garlic powder and coarse ground black pepper. Marinate in soy sauce for 24 hours. Bake in 150 degree F oven for 10 to 12 hours. DO NOT exceed 150 degrees F.</p>
<p>Beef Jerky #5</p>
<p>2 lb London Broil<br />1/2 c Soy sauce<br />2 tb Worstershire sauce<br />2 ts Garlic powder<br />2 ts Onion powder<br />2 ts Fresly ground black pepper<br />2 ts Red pepper flakes<br />2 tb Liquid smoke</p>
<p>Freeze the London Broil or other lean roast. When ready to make jerky, remove the roast from the freezer and let partially thaw. When just able to slice, first cast out all fat and then slice against the grain in thin (1/4 inch or less) slices. Cover the meat with the marinade, turn from time to time and let marinate overnight. In the morning line a shallow cookie sheet with a few layers of paper towels. Place on lower rack. Place upper rack in oven in top position and lower rack in lower position. Hang the beef slices from the upper rack with tooth picks above the paper towels. 6 hours at 160F average temp is about right. If your oven is real tight, you might crack open the door a bit to allow the water vapor to escape. </p>

<p>Perhaps one of the distinct characteristics of Philly cheesesteak is its meat. The meat slices in this recipe are generally thinly sliced top round or rib eye. Although other types of meat can be used for this dish, the top round and rib eye are most preferred. The meat slices are ensured to retain its juices as these are cooked at medium temperature on a lightly oiled griddle. As soon as the steak slices turn brown, these are quickly scrambled into finer pieces using a flat spatula. To make sure that these steak slices are perfectly cooked, these are often placed on top of fried onions. <p>Donned a &#8220;privilege&#8221; not a &#8220;right&#8221; to many is tasting and savoring some of the world&#8217;s finest smoked &#8220;open pit&#8221; beef sandwiches, or BBQ smoked much the same way.  If you&#8217;ve been to any professional BBQ festival or competition, you will see serious grillers working hard and many willing tasters begging for samples.  All of the competetors claim their beef is best.  It&#8217;s hard to say, as they are all delicious in their own right, and no two taste alike.  Sometimes I think even judges have a hard time.</p>
<p>Althought brisket is used for competetions, many other beef cuts will be grilled and turned into beef or barbecue at different fairs, festivals, and events.  Whether it&#8217;s rump roast or top round, no sandwich is complete without teh fixings.</p>
<p>Chances are, any BBQ vendor or professional smokes their beef cut for hours on end, loaded with secret spices, rubs or lathered in BBQ sauces.  Some use different flavor woods to give maximum flavor, and not to mention most have their own BBQ sauce concoction.</p>
<p>Serving the sandwich with &#8220;all the fixings&#8221; is as much a part of the sandwich as the marination, preparation and cooking process claims Wayne M. Schafer, owner of Big Fat Daddy&#8217;s. </p>
<p>This guy doesn&#8217;t play around. After a five step grilling process, his &#8220;pit beef&#8221; or &#8220;BBQ&#8221; sandwich isn&#8217;t complete without &#8220;horsey sauce&#8221;, a pinch of grilled onions and a topper of sweet red peppers. His &#8220;horsey sauce&#8221; is nothing other than a creamy horseradish sauce that adorns most of his beef offerings. Originally leaked to the NY Times by his younger brother in 2000, Schafer admits one key ingredient was missing.  He gave me his actual <strong>real</strong> recipe to share with the public:</p>
<p>HORSEY SAUCE:</p>
<p>Preparation Time: less than five minutes</p>
<p>1 cup mayonnaise  (full flavor, not low-fat)</p>
<p>1/2 cup horseradish, more or less to taste</p>
<p>2 teaspoons fresh lemon juice</p>
<p>Dash of salt</p>
<p>Dash of black pepper</p>
<p>*Splash of Red Wine Vinegar ie: 1 1/2 teaspoons or less per batch is the key ingredient*</p>
<p>Combine ingredients in a bowl, and whisk to a creamy lather.  This yields you about 1 1/2 cups, and will last refrigerated up to a month, but Schafer claims to use any unused portion in two weeks, or the vinegar will &#8220;take over&#8221; the taste. The batch can be doctored up after two weeks with a &#8220;pinch&#8221; of sugar.</p>
<p>Schafer also admits that he&#8217;s used this sauce on steaks and burgers and had rave reviews.</p>
